エチオピア・ゲデブ地区の標高1,983mに位置するGargari Gutity CWSは、イルガチェフェの南端にありながら、その品質の高さから独立した産地として注目されています。

このステーションでは、完熟したチェリーのみを手摘みで選別し、独自のウォッシュトプロセスで丁寧に処理。発酵工程が非常に特徴的で、まず12時間の一次発酵を経たあと、洗浄後にさらに48〜72時間の二次発酵を行うという二段階設計となっています。発酵を終えた豆は、気候条件を見ながら8〜12日間かけて棚式乾燥されます。

この緻密なプロセスによって生まれるのは、ゲデブらしい華やかなフローラルさ、柑橘を思わせる明るくシャープな酸、そしてクリーンでしなやかな質感です。
